Apple Pie Oatmeal

Ingredients

1/2 Cup – H2O
2 Tbsp – Brown Sugar
1/4 tsp – Cinnamon
1/2 Cup – Dried cranberries
1 - large Granny Smith Apple, peeled, cored and chopped
1 pinch of salt

Combine all except apples. Bring to a simmer over medium high heat until sugar is dissolved (about 1 minute) Add apples, reduce heat and cook until the apples are soft but still retain their shape (not mush)

NOTE: This mixture can be made up to 2 days in advance. Just be sure to warm it before using.

Oatmeal

2 3/4 c whole milk
1 cup quick cooking Irish Oatmeal
1 teaspoon Orange Zest
Pinch salt
2 Tbsp sugar

Put milk in medium saucepan and bring to a boil. Stir in oatmeal, zest & salt. Cook until it thickens. The oatmeal should be slightly loose.

Divide half of apple mixture into ovenproof baking ramekins or crocks. Layer Oatmeal over top. Place remaining apple mix on top of oatmeal, then finish with final layer of oatmeal. Smooth out top. Sprinkle top with sugar and Brule under a hot broiler until sugar is golden brown and bubbly. Serve
