Toni's Coffee Cake Recipe

Preheat oven to 400 degrees F.

Batter

In a bowl whisk together:
3/4 c. sugar
1/4 c. oil
1 egg
1/2 c. buttermilk

Sift together and stir in:
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt

Butter & flour an 8x8 baking pan. Put half of the batter into the baking dish then put half of the topping mixture on top. Pour the remaining batter on top and sprinkle with the remaining topping.

 

Topping

Mix together:
1/2 c. sugar
2 tbsp. flour
4 tbsp. butter
2 tsp. cinnamon

Baking time is 15 - 20 minutes
